Many of you know that we are awaiting the arrival of our second son, who is due on July 4th! I like to think that I'm waiting patiently, although it's certainly getting more difficult as we approach the due date. This pregnancy has flown by, as we have kept very busy with everything going on at the farm! I'll be stepping back from farm work (and already have in past weeks), but our crew will be harvesting your share and making sure that everything goes as smoothly as possible.
We're seeing the arrival of lots of new vegetables this week! Basil, summer squash/zucchini, cucumbers, savoy cabbage, fresh garlic have made the list, and beans will be here by the end of the week.
I love a good pasta dish, particularly in the summer when we're in the mood for something that's just as good cold as it is hot. I have to share one of my favorite recipes for summer squash and zucchini, which I always make at the beginning of the season as a kick-off to summer.
One-Pot Zucchini Basil Pasta - I use chicken broth instead of vegetable stock, and I've added all kinds of different cheeses to this including ricotta, parmesan, and asiago depending on what's in the fridge.
