Here's Prepping Day at RPfarm! Matt is hard at work packing baby carrots.
Unlike store-bought "baby" carrots, the carrots you get in your veggie box don't lose their beta carotene.
Why? Because carrots lose their beta carotene when the skin is peeled off. According to Jeanna Haggard assistant professor of nutrition at Bluffton University. However, they still maintain their vitamin A for your eye health.
