Summer squash and zucchini are synonymous with summer for me, perhaps so much so as tomatoes. They're coming in strong and there's two more plantings to go, so you have just seen the beginning of these fruits! If you're wondering what to do with the abundance of squash, I've got a few ideas for you. We often think of making cucumber pickles, but summer squash are delicious pickled too, and they're great as a condiment on just about anything. Squash fritters are another way that we love to use the squash and zucchini bounty. I like making them with a spicy aioli - just mix mayo, sriracha (or whatever hot sauce you like), lemon juice, and fresh pressed garlic.
The tomatoes are starting to trickle in, and eggplant are about to go crazy this week. If you're not normally a fan of eggplant, give it a shot this week and try making Baba Ghanouj! It's a delicious Middle Eastern grilled eggplant puree with lots of garlic and lemon juice.
Apologies to any folks that have been looking for the u-pick field, we have been so busy trying to get fall plants in the ground that we're behind getting signage up. If you can flag down Madison on Saturday morning she can show you where to pick, but we're hoping to have the signs up before the on farm pick up this week so it's clear where to go and what to pick.
Some folks have been asking about beans, and they are coming! They're a bit delayed but they plants are just about to flower now, so they're a week or two out from fruit.
