Spring planting is fully underway as I write this, and - to be completely honest - I'm too tired to think of a clever/in-depth note for you all at this point, but I'll be sending out an email to our general list sometime tomorrow.
Spinach and eggs are in abundance right now, so you'll see those in your share this week. Of course feel free to swap them out if you've got plenty on hand, or if egg dishes with spinach (quiche, frittata, strata...) just aren't your thing. (But if that's the case, maybe you just need a good strata recipe!)
If so, here's my personal favorite strata. It's easy, doesn't mind substitutions and uses lots of ingredients that you can usually find locally. I've made it with spinach, kale, or chard, and all work equally well.
