It just keeps getting cuter around here! Meet our 100th lamb!!!! We have 100 lambs and counting so far. We expect to get another 20 lambs within the next few weeks. We have had 4 calves born and another 30 calves should be joining us in the next couple of months. Everyone is healthy including the 7 bottle lambs that are always so much fun to feed. The cuteness doesn't stop there. We have also seen the emergence of box turtles and the tree frogs are back! Some of the spring crops planted not long ago, like the French Breakfast radishes, have made their way into your CSA this week. Mix these with the tasty carrots also included in your box for a side dish that is simple but absolutely delicious. The full recipe is included below.
Today our veggie crew worked hard between the breaks in the rain to get more eggplant into the ground. Summer squash and ginger were also planted and you can be on the look out for all those yummy additions soon. They even found time to get plenty of flowers in the ground as well.
We are all finding ways to enjoy the sunshine, embrace the rain showers, and continue our happy habits of eating healthy with the wonderful food from the farm. We hope you enjoy!!

Mint
Mint is an abundant herb. Voracious in its growth, mint sends runners underground to expand its territory and fill any space it’s given. You can recognize plants in the mint family because of their distinctive square stem. Roll the stem between your fingers and you can see for yourself. Easy to grow, it’s an incredibly fragrant herb that can be added fresh or dried to dishes. An especially delightful place for mint is a glass of water or tea. Hydration is important for good health. Drinking enough water throughout the day helps with your immune system, digestion, healthy cell function and helps regulate body temperature. Even with its incredible benefit, drinking enough water can sometimes be difficult. Try adding flavor to your water to add an extra boost. A spring of mint can be a great addition to give it some pizazz. Citrus slices, berries, or cucumber can also help add electrolytes and flavor to your water so you’ll want to keep drinking it instead of feeling like it’s a chore.
