We are days away from the fall equinox and my goodness how our minds and bodies are feeling the change. This incredible weather has us enjoying tasks that were honestly quite challenging at the peak of summer. Our veggie team has been planting beds of kale, broccoli, turnips, radishes, chard, cabbages and more! Just in time for the rain. We've harvested all the winter squash, half the corn, and are just a week or two away from harvesting sweet potatoes - yum!
In your next veggie box you can expect some of the usual suspects - beets, carrots, lettuce - as well as some turnip greens, winter squashes, specialty peppers and more. Your winter squash will either be a delicata or honeynut. Both are sweet, creamy and delicious. See a simple recipe for each below.
