Well here's a good pic of most of the crew for a before market lunch on Thursday. Not many of us had heard about the traditional Italian snack of melon & prosciutto (or shall I say, Prosciutto e Melone). So we were in for a real treat when Hans and Mark treated us all to the dish with a melon straight from the field! This is the week, we're putting a lot of melons into our harvest estimate, so enjoy the rare sweet treat from our farm. In carrying on with the 'heavy season' we'll be starting to harvest some winter squash this week beginning with acorns and spaghetti squashes. This is the season of plenty, so be sure to fill your boxes and enjoy it while it lasts for us in our fairly short growing season.
I also wanted to share a fabulous recipe for a crisp, cool raw zucchini salad that's perfect for these hot days - thank you to CSA member Diane for sharing! This Raw Zucchini Salad with Lemon Vinaigrette only has a few ingredients and you can likely find several of them either in our harvest estimate or in your own pantries.
