Where has the time gone!? The earlier sunsets serve as a reminder that the winter solstice- the shortest day of the year- is just weeks away. The bright news? We'll get a little more sunlight as we move through winter into spring. Lots of the greens we grow (like spinach and kale) are super hardy and can handle cold temperatures. On cold nights we cover all our greens with a cloth called remay, which is excellent for keeping our plants warm and protected on frosty nights. Our cooler is currently packed with an astonishing amount of root crops such as sweet potatoes, beets, turnips and radishes, which we will be sending throughout the season. Some might argue that summer vegetables are the pinnacle of garden food, but I strongly disagree. Cooked greens, fresh salads, warming soups and roasted root veggies are where it's at. Especially while we are spending more time indoors and working to keep our immune systems strong. We hope you enjoy next week's bounty!
