Farm Happenings for June 22, 2021

We are currently in the midst of Summer!! All the unexpected weather can sometimes interrupt our planting and harvesting plans, but we always have plenty to keep us busy. As you may have seen on our Instagram page, we have had quite a fun time moving all the piglets and the farm is full of Smith County's cutest calves that our livestock crew takes wonderful care of all hours of the day and night. They are currently weaning the bottle lambs by gradually cutting off their milk supply and introducing them back into the herd. A farmers work is never done.

Back in the fall, lots of food was planted that have finally been making an appearance into your box. This week will include one of my favorite. BEETS!!!! For some people, they either love or loathe beets. I personally love beets! The color, the earthiness…this batch turned out just as delicious as ever. I like them tossed in a green salad for a lovely burst of color. They also make a nice taco topping or just eaten by the forkful.

We are so grateful to be able to offer our CSA members local, healthy, delicious grass fed meat and organic vegetables. We love to harvest your share for the week and hope you take the opportunity to be adventurous and experiment with any different produce or meat you receive. Your taste buds will thank you for it. And the possibilities can be endless!

Farmer tip** Allow your CSA share to dictate your meal planning for the week. Experiment with new recipes so you make sure to get a varied diet for dinner. 

Remember, farming is dynamic and sometimes it doesn't go completely as planned. While this is our best guess of what will be in the box, sometimes we have to sub things based on availability.
