Farm Happenings for June 29, 2021

Posted on June 26th, 2021 by Melinda Hollyfield

It's almost July in Tennessee, which means our farm is booming with so much life! A few weeks of hot weather and rain make for lots of growth in the gardens. The summer squash and cucumbers are really coming on!

We added two adorable additions to the farm. You can see them relaxing with Gaabi and Tera in this week's photo.

The soil continues to become more and more carbon-rich through our continued dedication to regenerative agriculture. Healthy soil means healthy food, so you can eat Caney Fork products knowing that you are getting the most out of every bite!

Each season brings unique challenges, lessons and failures. Farming reminds us that we are always at the humbling mercy of nature.

Remember, farming is dynamic and sometimes it doesn't go completely as planned. While this is our best guess of what will be in the box, sometimes we have to sub things based on availability.

*The harvest list is always tentative. The garden decides what's in the box.

What's in the veggie box:

Potatoes
Baby carrots
Cucumber
Baby beets
Italian greens
Head lettuce
Bunching onions
Summer squash
Basil
Dill

Few foods are as refreshing or adaptable as cucumbers. Their subtle flavor and high-water content make them a welcome addition to a range of dishes, from salads and soups to pickles and cocktails. Here are a couple of recipes I love.

Cucumber Cooler

Cucumber Feta Toast

We hope you enjoy this week's bounty!
