The new cooler is in, but there's a lot of finish work to do before the project is complete. Amazingly, this walk in cooler was built in about 1/2 hour by this fine crew. It's made out of insulated panels that 'cam-lock' together at a few points at each seam. A bit like legos or lincoln logs for adults, lol. We still have some electrical work to do to get the cooler up and running, and we plan to extend our wash/pack roof so that it's out of the weather. But we're thrilled with the progress, and it's coming at a very opportune time. This week, the cucumbers, summer squash, and cherry tomatoes are showing serious signs of ripening, and all of those crops are kept at a different (warmer) temperature than our root crops or greens, so this second cooler will be extremely useful real quick!
