Well, we didn't wash away entirely last week, although we did get almost 6 inches of rain! The ground still squishes when we walk around, but due to the mulches and compost that cover most of our growing areas, we didn't lose significant soil. Meanwhile the plants are thriving in their deep compost with increasing day length, lots of natural water, and a fair bit of warmth. So today the potatoes are getting planted, we're transplanting more lettuce and onions, and tomorrow we'll plant the first tomatoes in the high tunnel.
We've got lots of parsley this week, and I've included a recipe for chimichuri (basically parsley pesto, with a unique kick, it's one of our favorite sauces with meat). Also, we have lots and lots of spinach, a little head lettuce, radishes, and mountains of kale. So dive in, order lots of veggies, and come get plants from the self-service plant sale, which is happening from 8 to dark every day in the farmstand.
