We hope you are having a wonderful October. We unexpectedly got our first frosts already, taking the last of the flowers, basil, and summer squash! Our farm is in a valley, so we get significantly colder temperatures than the local forecasts, so we are preparing for the additional freezes coming later this week.
Have you all been enjoying the fall produce? Lettuce and greens are back full force, and other seasonal goodies like butternuts and ginger are such special additions to these fall boxes.
Ginger is a staple in our family.
The fresh baby ginger will stay fresh for several weeks when you store it in a sealed bag in the refrigerator. For even longer storage (up to a year+) simply freeze the entire chunk, and grate it into your recipes throughout the year.
We make lots of teas, curries, soups, and even spiced roasted veggies with our ginger. Ginger is really a super-food. It is an antihistamine (seasonal allergies anyone!?) , an immune booster, and even aids in smooth digestion. Ginger is also an anti-inflammatory and mild pain reliever reducing discomforts and pains such as nausea, menstrual cramps, and even arthritis pains.
