We hope you are all enjoying the fresh and abundant produce of summer BUT don't forget about the other half of the year! Out thoughts usually turn to preserving as much food as possible this time of year and we have the produce to support your preserving habits. We have 10 pound boxes of red tomatoes, bulk bags of paste tomatoes, loads of eggplant, cucumbers and peppers for pickling, basil for pesto making, and herbs for drying. If you have a special request, just ask!
Our all-time favorite way to preserve tomatoes is by making and freezing Roasted Tomato Sauce. Here's how you make it:
Fill your largest stock pot with diced red tomatoes, paste or beefsteak, skin and all. Add about 1/4 cup olive oil, salt to taste (start with a tablespoon), a full bunch of basil and/or oregano and/or thyme (leaves only), and at least two whole heads of garlic, minced. Give it a stir to mix, then place in your oven with the lid off to roast for 3-4 hours (less if using all paste tomatoes), stirring every hour or so. The volume will reduce by about 1/3 and you'll be left with a rich, concentrated tomato sauce that is great on anything! Once it cools completely, we freeze it in wide mouth quart jars, leaving about an inch of headspace for expansion.
