Greetings Farm Stand Customers!
This week I want to introduce you to some winter vegetable stars, storage radishes! We have four types/colors to offer and we hope you'll try them all before the season runs out. The varieties are (left to right in the pic below, with their store name in parentheses): Red King 2 (red winter radish), KN Bravo (purple winter radish), Artesia (pink winter radish), Starburst (Watermelon radish).
These are all related to daikon radishes, and they are bred to store for many months under the right conditions. We seeded them by hand into well prepared soil in late July for harvest after frost in early October. You will find they are generally more crunchy, less juicy, and more crisp than summer radishes. Here are some ideas for how to use them: They are excellent for quick pickles, long lacto-fermentation, shaved into a salad on their own, shaved into vegetable fritters and mixed with shaved potato or sweet potato, and they make a stunning presentation when sliced thinly onto a green salad.
To store them long term, simply keep them in a sealed plastic bag in the coldest part of your fridge, and avoid letting them freeze.
