Welcome to Week 10!
For most farms in the North, this time of year is all about harvesting. The crops that were planted in April and May are coming to fruition and it is the farmer's job to keep up with it all. The same is true on our farm, however we have the added complexity of growing year round, which means that we're keeping up with harvesting AND planting for fall and winter! We are actually in what we call the "third spring" because of all the seeding and transplanting we're doing for winter harvests.
Some of the crops that we're starting right now are lettuce heads, cilantro, spring mix, winter radishes, chard, kale, cauliflower, kohlrabi, fennel, parsley and celery! In addition, we've brought in our garlic crop, our onions will be ready within a couple of weeks, and our storage potatoes are looking tall and bushy and are covered in flowers! We have to create an intricate schedule and follow it closely in order for the timing of spring, summer and fall to work out, but we're getting better every year and you all get to reap the benefits!
If you haven't tried eggplant yet this season, now is the time! They are large and shiny, and the fruit size will decrease as the plants get tired. Our favorite, simple preparation is to saute it with garlic, ginger and soy sauce.
Beat the heat, enjoy the lake, and eat well!
